Serves 8
Ingredients:
- 3/4 lb. lean ground beef
- 3/4 lb. lean ground turkey
- 1/2 c. catsup
- 1 egg
- 5 T. oatmeal
- 2 tsp. parsley
- 1/2 tsp. black pepper
- 1/2 tsp. garlic powder
- 1/2 tsp. basil
- 1/2 tsp. oregano
- 1/2 tsp. salt
Preparation:
- Mix until well blended: ground beef and ground turkey, catsup (reserving 2 Tbsp. for the topping), eggs, oatmeal, diced onions, parsley, pepper, garlic, basil, oregano, and salt.
- Shape the mixture into a loaf; press mixture into a loaf pan. Keep the top smooth.
- Spread 2 Tbsp. catsup over the top of the loaf to retain moisture.
- Bake in a 300°F oven for 1 hour 15 minutes (internal temperature must be 165°F on a thermometer inserted in the center of the loaf).
- Drain fat from the pan, let meat loaf rest for 20 minutes, slice in 8 pieces, and then serve. Makes 8 servings.
