Kid Tested Recipes

Students at 12 Denver Public Schools tested SuperFoods recipes during the 2007-2008 school year, trying 20 new items overall. After going through the 8300 surveys these students completed, the results are in! Those recipes that 50% of students or more rated as good or excellent will be considered for the menu. In addition to student acceptance, recipes also have to meet the following criteria:

  • Contain one or more SuperFoods (at least 1/8c. of a SuperFood or contain 50% or more whole grains)
  • Be affordable
  • Contribute to the school meal and fit with the nutrient analysis
  • Be feasible for staff to prepare with time and equipment constraints

The SuperFoods recipes that made the school menu this year were: applesauce oatmeal, cherry bread, cheery cherry spinach salad, classic oatmeal, honey oat roll, honey orange dressing, pumpkin cranberry bread, savory black beans, and spicy corn salad.

The recipes being considered for the menu for the 2008-2009 school year include: the Asian coleslaw, black bean brownies, chicken rice wrap, fiesta rice wrap, fruity chicken salad, spicy macaroni and cheese, southwestern couscous wrap, and white whole wheat rolls.

We have had numerous requests for these recipes so below are some we’d like to share.
